The Spiritual Heart of Barbados
Mount Gay, the iconic (and seriously delicious) Bajan rum isn’t just a brand – it’s history in a bottle. With records dating back to 1703, it’s the world’s oldest running rum distillery. Unlike many distillery tours, the Mount Gay Distillery tour offers access to every major step of the production process in a live setting. You’re not just hearing about rum — you’re seeing, smelling, and tasting it at the source.
In this guide, I’m sharing everything you need to know about visiting the Mount Gay Distillery in Barbados, including booking tips, what to expect, and a few insider secrets to make the most of your visit.

What to Expect During the Mount Gay Distillery Tour
As soon as I arrived, I could tell this wasn’t just any rum operation. The site is huge, with sprawling warehouses, towering silos, and the sweet smell of molasses hanging in the air.

The Mount Gay Great House
We started in what’s left of the original great house — now a stylish lounge and tasting area that honestly looked more like a boutique hotel lobby than a distillery. While we waited for the full group, the staff handed out freshly mixed Rum Punch. If only every tour started this way.
Water and Molasses
The first stop was the old well – the very same well that’s been drawing pure water from the limestone aquifer since Mount Gay first opened. They even offered small samples, and it was cool (literally) to taste the source of something so historic. Next, we moved into the molasses storage area, where the smell was thick, rich, and mouthwatering. No photos allowed here — honestly, it wasn’t the prettiest part, but it smelled amazing.
Fermentation – the life and soul of the party
From there, the tour headed to the fermentation tanks — massive oak vats where the magic starts. Here, the tour stops briefly with the tour guide sharing insights into the production process.
Like many distilleries and wineries, Mount Gay’s yeast strain is cultivated from the air around the distillery. However, it was fascinating to hear how the yeast is fed a blend of Bajan molasses (high in sugar, low in nutrients) with molasses from other, volcanic Caribbean islands like Dominica (lower sugar, but nutrient-packed). The result? A perfect balance that keeps the yeast active longer, producing deeper, more complex flavours in the final rum. It’s a smart bit of rum science you wouldn’t appreciate without seeing it up close.

The Proof is in the Distillation
The fermented molasses is triple-distilled to remove the heads and tails, keeping only the smooth heart of the spirit.
We toured the pot stills — mostly modern — and saw something rare: an original Coffey still. Mount Gay had actually mothballed it for years when they shifted toward volume production, but they eventually brought it back by calling in a retired worker who knew the old techniques firsthand. Seeing it back in action was a real highlight.
The Warehouse of Dreams

Before finishing up, we toured one of the maturation warehouses.
Each barrel holds around 200 bottles, but every year, 6-9% is lost to the “angel’s share” — the rum that naturally evaporates during ageing.
In Barbados’ hot, humid climate, rum matures much faster than it would in cooler countries, meaning a 5-year-old rum here can taste as rich and complex as a 15-year-old spirit from Europe.
It was with this insight that the guide shared one of the best quotes of the day:
“Maturity is earned, age is not.“
.
The Rum Tasting

Finally, we headed back to the tasting room in the great house, where we sampled Eclipse, Black Barrel, and XO.
Each pour was about half an ounce — just enough to savour without going overboard. If you’re new to sipping rum neat, don’t worry — the guide walks you through how to properly nose, sip, and appreciate each glass.
For those looking to get a souviours the Mount Gay Black Barrel and XO are were both available to buy, including a cask strength (66% proof) Black Barrel that is only available for purchase after the tour. There was also a limited number of Mount Gay PX Sherry Cask Expression however this was well outside of my price range and we opted for 2 bottles of the XO & one standard and one cask strength Black Barrel.
Final Thoughts
If you’re heading to Barbados and want an experience that’s part history lesson, part rum masterclass, and all-around unforgettable, the Mount Gay Distillery tour is a must. It’s not just about tasting great rum — it’s about stepping into the heart of Bajan culture and seeing how the world’s oldest running distillery still does things ‘the right way’. The tour is fun, insightful, and just the right amount of indulgent. For me, it was a something i had always wanted to do, and if you’re even remotely curious, trust me — book it.
You’ll be sipping, smiling, and telling everyone about it long after you get home.
